After roasting, coffee releases carbon dioxide in a process known as degassing. During this period, flavours settle and develop. Brew too early and the coffee can taste sharp or unstable. Brew too late and it can taste flat, dull, or lifeless. Most freshly roasted coffee is best enjoyed within a few weeks of roasting, depending on the brew method.
